Cranberry Cardamon or Apple Peach Cinnamon Upside Down Cake

Instructions:
- Preheat oven to 350F (180C).
- Spray or butter bottom of 9-inch square pan or 8-inch springform pan.
- Coat bottom of pan with Rootham Apple Peach Cinnamon Jam & set aside.
- Beat together cream cheese, sugar, butter, & vanilla.
- Add eggs, one at a time.
- In separate bowl, combine flour, baking powder & salt.
- Slowly add flour mixture to wet mixture until well blended.
- Pour into pan over the Brandied Peach Marmalade or use one of the other mentioned Rootham products for a different flavour.
- Bake 1 1/2 hours. Cool completely & flip over onto serving plate.
