Mango Sweet Potato Rounds

Especially tasty for the vegetarian and gluten free guest.  

Optional - Instead of Parsley, garnish with any herb such as Basil, Chives or Oregano.


  1. Wash sweet potato well or peel skin from sweet potato.  
  2. Cut sweet potato into rounds not more then 1 cm thick.
  3. Fry sweet potato rounds in vegetable or olive oil.
  4. Drain cooked sweet potato rounds on paper towels.
  5. Cover sweet potato round with Rootham Mango Chutney.
  6. Top with crumbled feta cheese.
  7. Garnish with chopped parsley.
