Cheddar Cheese Crisps topped with Tangy Red Pepper Jelly

Easy to make - crowd pleasing appetizers.

Instructions:

  1. Place cheese & butter into food processor & mix thoroughly.
  2. Add flour. (Note: if using grated cheese, then use less flour). Mix well to form dough.
  3. Divide dough into 4 and shape each into logs about 1 1/2 inches (3.5cm) thick.
  4. Wrap separately in saran or wax paper and refrigerate for at least 2 hours.
  5. Preheat oven to 400F (200C). Slice logs into 1/4 inch (.5cm) pieces (coin shape)
  6. Place on ungreased cookie sheet & bake for 10 mins. Let cool.
  7. Top with Rootham Red Pepper Jelly.
