Ricotta Parfait with Brandied Cherries

Instructions:

  1. Beat ricotta until smooth.
  2. Add egg yolk and 3 tbsp (45ml) of syrup from Rootham Ontario Cherries Splashed with Brandy or use Rootham Redhaven Peaches splashed with Peach Schnapps or Rootham Bartlett Pears Splashed with Triple Sec.
  3. Refrigerate to chill.
  4. Pit the cherries and layer with ricotta mixture in parfait glasses.
