ZFilo Sticks with Tangy Red Pepper Jelly

  1. Preheat the oven to 375F (190C).
  2. Combine three cheese types into a mixture.
  3. Combine egg and 1/2 cup (125ml) cheese mixture.
  4. Stack the sheets of filo on top of each other.
  5. With a sharp knife cut through all the sheets of filo lengthwise into thirds.
  6. Cover with very damp tea towel.
  7. Working with 4 sheets of filo at a time.
  8. Place 3 sheets parallel to each other with the narrow ends facing you, overlapped on long edge
  9. Brush the strips of filo with melted butter.
  10. Place the 4th strip up the middle and brush with butter.
  11. Placed 1 tbsp (15ml) of cheese mixture at end closest to you
  12. Place 1 tbsp (15ml) of Rootham Tangy Red Pepper Jelly spread up middle, leaving a 1/2 inch border on each side and 1 inch at far end.
  13. Carefully roll up the filo, jellyroll style.
  14. Pinch ends together.
  15. Brush with butter.
  16. Place on oiled baking sheets.
  17. Bake until the pastry is golden brown, about 15 minutes.
  18. Serve warm.
