Raspberry Coconut Squares



BASE:  Preheat oven to 350F (180C).  Grease 9" (2.5L) square cake pan with shortening. Combine all ingredients for base, mixing until crumbly.  Press firmly in greased pan.

TOPPING:  Spread Rootham Raspberry Jam over base.  Beat eggs lightly.  Stir in remaining ingredients.  Spread evenly over jam.  Bake at 350F (180C) for 25-30 mins., or until golden.  Cut into large squares and serve warm or coool, with ice cream or shipped cream, if desired.

HINT:  Store in refrigerator.  Excellent for freezing.
