ZForest Mushroom Crostini

A taste of Italy - pieces of sundried tomato and basil !



1.  Place dried forest mushrooms in a heat proof bowl, (large measuring cup works well).  Cover with boiling water.  Allow to cool, then drain & rinse.

2.  Pour about 1/4 cup (60ml) of Rootham Spice Sundried Tomato Basil Salad Dressing in frypan.  Add drained mushrooms when frypan is hot & gently saute for about 5 mins.  Add more dressing to cover mushrooms.

3.  Cover & simmer until most of dressing has absorbed & evaporated.  Cool mushrooms.

4.  Toast slices of baguette.  Place slice of boconcini cheese on top of bread, cover with mushrooms and top with slice of grape tomato.
