Baked Brie with Caramelized Onion Chutney

For baking Brie, use a nice dish that you will be able to serve from oven to your table.   It is difficult to move warm runny Brie.  The heated dish will also keep Brie warm longer.    Canadian potters make exquisite dishes specifically for this purpose. 


1.  Preheat oven to 350F (180C). 

2.  Cut Brie in middle to make two full rounds.

3.  Place one round, with rind side down, in a baking dish.  Spread Rootham Caramelized Onion Chutney on top of this half.

4.  Take second round, with rind side up and place on top of the chutney.  Basically it looks like sandwich with chutney in the middle.

5.  Bake in pre-heated oven for 20-30 mins. until soft and warmed through.  May use microwave instead of oven.

6.  When heated place, place more chutney on top & serve with crackers and/or crostinis.
