Beet Salad with Goat Cheese



1.  Place beets in saucepan.  Cook until tender.  Drain, cool, peel & cut into cubes.

2.  Place walnuts in skillet over medium-high heat.  Heat until warm and starting to toast, then stir in maple syrup.  Cook & stir until evenly coated.  Remove from stove and set aside to cool.

3.  Place large helping of baby salad greens on individual plates.  Sprinkle candied walnuts over the greens and place cooked beets over the walnuts.  Top with dabs of goat cheese and drizzle with Rootham Raspberry Razzle Salad Dressing on top.
