Sweet Potato, Chick Pea Poppyseed Salad

Ingredients:

Instructions:

1.  If using dried chick peas, soak overnight in pot of water. 

2.  Either boil or bake sweet potatoes until soft but firm.  Peel & cut into large bite size chucks.

3.  Combine warm sweet potatoes, chick peas and onions.  Toss with Rootham Peach Poppyseed Salad Dressing.  Serve warm or chill overnight for infusion of flavours.

Variation:  use slightly blanched broccoli  pieces instead of the sweet potato.
