Baked Brie in Filo with Wild Blueberry Raspberry Spread

Although this recipe takes some preparation, it is easy.  Can be served as an appetizer but also makes a a great dessert! 

Instructions:

1.  Preheat oven to 375F (190C).

2.  On a clean work surface, lay a sheet of filo & brush with melted butter.  Place second sheet on top & brush with butter.  Continue until all sheets of filo are buttered.  Optional:  Trim filo to make a 12-inch square.  Trim off corners to form circle.

3.  Place cheese in center of filo.  Cover top of Brie with an 1 cm of Rootham Wild Blueberry Raspberry Spread.

4.  Lift edge of filo and place it over the cheese.  Continue lifting; pleating until you've completely enclosed the Brie.  Brush with butter.

5.  Place foil on greased baking sheet and bake until filo is golden brown - about 25 mins.   Serve warm.
