Sesame Sweet Potato Samosas with Rootham Black Pepper Lime Chutney

Warm up this Autumn with sesame sweet potato samosas served with Rootham Black Pepper Lime Chutney.

Ingredients:

Instructions:

  1. Preheat oven to 375 ºF (190 ºC).
  2. Cook sweet potato until soft. Either bake sweet potato with skin on 400 ºF (200 ºC) or place sweet potato with skin on in boiling water or microwave until soft.
  3. Scoop sweet potato from skin.
  4. Mash sweet potato with 30ml (2tbsp) Rootham Black Pepper and Lime Chutney.
  5. Place 7.5ml (1½ tsp) of sweet potato mixture into center of each wonton wrapper.
  6. Brush two adjacent edges of wrapper with water, fold into triangle and press edges together to seal.
  7. Brush both sides with sesame oil then place samosas on baking sheet.
  8. Bake in preheated oven for 10 minutes then turn over & bake for 5 minutes more.
  9. Place on platter and serve with Black Pepper and Lime Chutney

Makes 24 samosas.

TIPS: Do not substitute oil. Light or medium sesame oil adds a nutty flavour.
