Roasted Beet Salad with Feta Cheese

Instructions:

  1. Preheat oven to 375F (190C).
  2. Cut greens off beets & save.
  3. Arrange beets, in single layer, on baking dish and add water.
  4. Cover and bake until beets are tender when pierced, about 1 hour.
  5. Peel beets while warm & cut into thin slices. Transfer to bowl & mix in capers.
  6. Wash beet greens & transfer to large pot.
  7. Stir over high heat until just wilted, but still green, about 4 minutes.
  8. Drain greens & squeeze out excess moisture.
  9. Cool & chop coarsely.
  10. In bowl toss beet greens with Rootham Raspberry Razzle Salad Dressing.
  11. Arrange beets on plate surrounded with beet greens.
  12. Sprinkle with feta cheese.
