ZTangy Tartlets

This is a great appetizer to take to parties as it travels well, keeps at room temperature and has no preparation once you get to the party.



Mix flour, salt and parsley lightly by hand.

Cut in butter until mixture looks like oatmeal sized crumbs. A pastry blender or 2 knives work well. Stir in to grated cheese.

Add water and vinegar to mixture, tossing with a fork until dough starts to clump together. Gather dough with hands and press all the dough together. Roll dough into a long cylindrical shape about 1 1/2 inch round and about 1 foot long.

Place in plastic wrap. Once in plastic wrap the dough can be reshaped into a more even cylinder. Refridgerate for 30 minutes.

Preheat oven to 375F or 190C.

Cut dough into 36 slices. Place each slice into slightly greased mini tart pans.

Press dough on to the bottom and up the sides of the pan. Dont worry if the dough splits, just press it together to form a complete tartlet.

As the dough becomes room temperature the slices will mold with ease.

Spoon 1/2 teaspoon of Roothams Tangy Red Pepper Jelly into each tartlet cup.

Bake in preheated oven until golden brown. This will take approximately 15-20 minutes.

Remove tarts from the pan and place on a rack to cool.
