Soup Fire Roasted Butternut Squash

Toss all vegetables, garlic, salt and pepper into a soup pot and cover with water and bring to a boil.

Reduce the heat and simmer for about 40 minutes.

Strain the cooked vegetables. Keep the cooking water to add while pureeing vegetables and adjusting the thickness of the soup.

Cool slightly, then puree vegetables in blender or food processor.

Return the pureed vegetables to the cooking pot. Add curry, butter and enough liquid to create a pleasing consistency.

Reheat and serve with a dollop of Roothams Fire Roasted Red Pepper Ketchup.
