Spicy Sundried Tomato Quinoa Salad

Ingredients:

Instructions:

Place 1 cup of water and 1/2 cup of quinoa in a saucepan and bring to a boil. Reduce to simmer and place lid on top and cook for 15 minutes until water is absorbed.

Saute mushrooms and onions in 1/2 cup of Roothams Spicy Sundried Tomato Basil Salad Dressing.

Combine all ingredients and if needed toss with more Roothams Spicy Sundried Tomato Basil Salad Dressing. 

Serve warm or chill over night.
