Thai Style Roasted Prawns

Roasted prawns are one of the easiest hors d'ouevres to prepare and execute as your guests arrive. They can be marinated days in advance and you could even freeze them in the marinade in smaller portions that you can pull out when you expect company.



Roughly chop the lemongrass, ginger and garlic and then place them in a blender with the oils and some salt and pepper. Puree to make the marinade. If you will be cooking the prawns the same day you can add salt. If not, omit the salt but season with pepper.

Place the prawns in a zip-lock bag and cover with the marinade. Seal the bag and then squish the contents around to ensure that the prawns are covered completely.

Freeze to save for sometime off in the future or simply refridgerate for use in the next two days.

When you are ready to serve the prawns preheat oven to 425F. Lay the prawns on a parchment lined cookie sheet in a single layer. Place the sheet in the oven and cook for 2.5 minutes and then flip the prawns over. Cook for an additional 4 minutes on the second side. Remove from the oven and serve with limes for squeezing and Roothams Thai Dipping Sauce.
