Cherry Upside Down Cake

This batter is extremely good and the method is foolproof. We use our Ontario Cherries splashed with Brandy but you could easily substitute with our Peaches.


Preheat the oven to 350F. Grease a large lasagne-sized pan with butter. Sprinkle the brown sugar over the bottom of the pan.

In a mixing bowl, mix the softened butter with the 2 cups of sugar, 2 eggs and 2 tsp of vanilla extract.

In a seperate bowl, sift together the flour, baking powder and salt.

Add one-third of the flour mixture to the butter mixture. Then add 2/3 cup of milk and combine. Add another third of the flour and mix. Again, add the remaining 2/3 cup of milk and combine. Lastly, combine the remaining flour. This method limits the lumps. Add the lemon zest and juice and combine.

Lay all the Roothams Ontario Cherries Splashed with Brandy in the pan on top of the butter and brown sugar. Then cover evenly with the batter.

Bake in the pre-heated oven for 40 minutes or until a toothpick comes out just barely clean.

This can be cut into tiny cylinders and served as a small bites with whipped cream or served in larger portions with Roothams Irresistible Chocolate Sauce, whipped cream and/or icecream.
