Flatbread Broccoli Chicken Roasted Red Pepper

Flatbread is a great edible vehicle for hors d'oeuvres. The fact that it can be par-baked and assembled long before guests arrive makes it a host/hostess dream option as well. The key is to think outside the box in terms of the first layer, just like on pizza. Think beyond tomato sauce. The options are limitless.

SHORT OF TIME instead of making flatbread from scratch purchase flatbread or pizza crust. With purchased flatbread, start at Flatbread Topping in instructions.

Flatbread

Dissolve the yeast in warm water in a bowl of a stand mixer. Add the sugar, oil, salt, and rosemary, and then, with the dough hook running, add enough flour to make a smooth, non-sticky dough.

Knead the mixture for another 6-8 minutes to develop the gluten matrix. This gluten is what allows us to stretch the dough so thinly and why only wheat flour will work here. As it works the dough will get a little looser and smoother.

Place the dough in an oiled bowl and turn it to coat both sides with the oil. Cover and let rise in a warm place for 30 minutes. Then, punch down the dough and let it rise again for another 30 minutes.

Punch dough down one final time and divide into 8 oz portions. You should get roughly 12. Roll each into a round loaf. Let stand for 3 minutes to relax.

Place any extra dough in the freezer. Then, starting with the loaf you formed first, roll each one out to roughly 10-inch circles.

Place each rolled out piece on a sheet pan with parchment and rub with a little olive oil. Cover with another sheet of parchment and another sheet pan of the same size. This will prevent the bread from rising too much. Bake at 375F for approximately 25 minutes. Remove the top sheet and parchment after 15 minutes.

Flatbread Topping

1.  Spread Roothams Fire Roasted Red Pepper Ketchup on the baked flatbread.

2.  Garnish with the  sliced Buffalo Mozzarella Cheese followed by the chicken and broccoli.

3.  Be sure not to overload the flatbread or the garnish will wimply spill everywhere.

4.  Season with salt and pepper.

5.  Place the flatbread back into the 375F oven for a few minutes to warm through and melt cheese. Cut into manageable pieces for your guests and serve.
